Sudden Change of Approvers

Experts,

  I have a scenario where documents are sent for approval but the approvers become absent for one reason or the other for a long period of time e.g. sudden illness.In light of this, is it possible to change the approval template or approvers and redirect them to someone else ? This will avoid repetition of a lot of work.
